Like many of you I have just found a rather large courgette. I'm not a fan of stuffed marrow but I was wondering if anyone had an interesting marrow chutney recipe. I prefer spicy chutneys although any recipe would be welcome. Many thanks.

Hi Hungry Caterpillar,
I made this one up, but I am actually really pleased with it, in fact I slightly prefer it to my grans Apple Chutney which was previously my holy grail!
1 lb Courgette
1/2 lb celery
1/2 lb onion
1 lb sultanas
3/4 lb tomatoes
3/4 lb Apples
2 pts cider vinegar
1 & 1/2 lbs sugar
2 tsps ground ginger
2 tsps mixed spice
2 tsps mustard powder
1 tsp dried chillis
I am very happy with the flavour but will probably add an extra tsp chilli next time, as although the heat is there when you eat it on its own, it is lost a bit with stuff. I also probably overdid the sultanas, but my aim was to have 4 & 1/2 lbs fruit, to the 2pts vinegar, so I am sure you could fiddle with the quantities to suit what ever you have to hand, and your preference.
