At this time of year, it's easy to get a glut of one or more types of veg.

My daughter Jenni's been coming up with some ideas to help us. Having tried almost every way of using courgette we could think of, this was a refreshing change:

For anyone who's sweltering in today's heat, here's another idea for using courgettes that you may not have seen before:
Courgette Halva (here, in the form of an ice cream :shock: )

Whilst these may look strange, I can confirm that the sweetness and spices combine with the courgettes to produce a wonderful taste! More info on how to make them here
