GREEN TOMATO SALSA
1 1b green tomatoes
3 serrano chillis (or another hot type) with seeds
bunch of fresh coriander
2 tbsp lime juice
1 tsp sugar
1 tsp salt
Put all ingredients together in a food processor and blend until smooth. It's good served with burgers or with tortilla chips.
FRIED GREEN TOMATOES
250g cornmeal
60g plain flour
1 tsp sugar
1.5 kg large green tomatoes, thickly sliced
oil for frying
salt and pepper to taste
1. Mix together cornmeal, flour and sugar. Press both sides of each tomato slice into the mixture to coat them.
2. Pour some oil into a large heavy based frying pan and fly in batches until golden on both sides (should take maximum of 2 mins each side).
3. Remove from pan, drain on kitchen paper and sprinkle with salt and pepper.
I like them served with salad, crusty bread and green tomato chutney.
