Thought you might enjoy this - just had it for lunch and my husband said he could eat it every day!!
Good immune-boosting food (both just had nasty viruses and needed something tasty and uplifting). Hope you enjoy it.
Ingredients :
Cherry tomatoes
1-2 whole heads garlic
Olive oil
Salt and black pepper
Fresh thyme
Buffalo Mozzarella
Fresh basil
Wash cherry tomatoes and place in baking tray with peeled garlic (larger cloves cut in half). Sprinkle with fresh, chopped thyme and season with salt and ground black pepper.
Roast in olive oil in a hot oven for 20-25 minutes then serve in soup plates with chopped mozzarella and basil. Goes well with warm French bread for dipping.
Very quick and easy lunch or starter.

Think it will work really well with baby plum toms too when they're ready - I save seed each year from my Vicki tomatoes, don't know if you can still buy the seed, but they're really sweet.
It sounds like a lot of garlic, but once you've eaten 2 or 3 cloves you've probably reached saturation point with the smell anyway - you're not going to smell any worse if you eat 1 or 2 bulbs Good for colds too!
