Chicken with green tomatoes

- aka Zanzibar chicken

oil
1 chicken, jointed
2 onions, chopped
3 cloves garlic, chopped/crushed
2 green chillies
3 green tomatoes, chopped
1/2 tsp turmeric
1/2 tsp cumin seeds
1/2 tsp coriander seeds
8 cardamon pods
300ml coconut cream
800 ml coconut milk
1/2 lime

To serve


cooked green beans, sliced into 3
1 green chilli
basil
naan bread

Method

1. Fry chicken; remove
2. Fry onion, garlic, chilli until soft
3. Add chopped tomatoes
4. Add coconut cream and milk; simmer
5. Grind spices and stir into mixture
6. Replace chicken
7. Simmer 45 mins without lid

To serve

1. Add beans to pan to heat through
2. Grind chilli, basil, lime juice in pestle and mortar
3. Sprinkle mix into chicken and serve with naan bread

NB I don't use as much coconut. And I've just discovered dried coconut powder which is very useful because I don't always want a whole tin of the milk. I'm probably a bit behind in this and everyone knows about it!
