I bought a paper this morning that, sadly, I had to discard after a rather intense deluge walking back from the beach!
However, before it was chucked away I noticed a superb recipe for the above, which is really like a variation on panna cotta. If you can get online at www.indepedent.co.uk, and search under elderflower it should come up - I will post the recipe later but they're having problems with their server at the mo. The only way I would change it, is that having a load of elderflower cordial, I would use that rather than mucking about with fresh elderflowers, as it's pretty much the same process. If a picture comes up too, you'll see that it really does look superb with the raspberries.
