Just made a huge veggie soup with all our veggies from our allotment, added red lentils and harissa paste. Then made four dishes of cooked veggies (from our plot) courgettes onions, and garlic fried gently till softened (no butter) broccoli, french beans, carrots, leeks were steamed then made a white sauce (no butter, just cornflour put over the veggies in the frying pan then added the milk and waited till it was thickened, then added the dijon mustard and stirred in low fat cheese took it off the heat and added three tablespoons of fat free yoghurt, and then mixed the steamed veggies put them in dishes and topped with breadcrumbs mixed with cheese and cooked in the oven for about 30 minutes, I have made 4 and we have frozen three. We ate one with our courgette, feta and mint burgers. Delish.
