carrot recipes

Never mind the courgettes and beetroot I have the biggest best crop of summer carrots I have ever had which need using before my main crop take over. I seem to remember some years ago now TGK printed a recipe for Carrot and lemon marmalade which was quick and easy. I've Googled a search but they all seem to need a long drawn out process. I don't suppose anyone still as the TKG recipe.
Any other ideas to preserve carrots would be gratefully received. Ideally something that could be sold in aid of charity.

Carrot jam sounds good Alan. Do you have the recipe?
Cakes are a nice idea but I cannot keep them; not enough freezer space. End of September is when we hold the Michaelmas stall.

I think the tomato recipes are going to be useful later on too. Didn't realise till I printed it all out.

Hi Beryl,
There are two carrot preserve recipes I used based on Mrs Beetons cookbook.
One is a carrot marmalade, and depending on what variety you grew, there is also a faux apricot
