Baby beetroot salad with a dressing of olive oil, wine vinegar, anchovies and spring onion.

Today's lunch made with this year's first beetroot.

I'll post recipe if anyone is interested.

Hi Arnie

Here's the recipe, though it's very obvious!

Serves 2

5 or 6 small beetroot about 2 inches in diameter
2 tablespoons extra virgin olive oil
1 tablespoon wine vinegar
3 or 4 anchovy fillets finely chopped
tablespoon of very finely chopped spring onion

Cook beetroot, skin, trim stalks but do not remove, cut in half
Mix all vinaigrette ingredients well and pour over warm halved beetroots

That sounds nice Alan, I'll give it a go in about two weeks, my beets are a bit behind yours! I'm the only person in the house who likes beetroot so I can do whatever I like with it. It's one of those 'marmite' veggies I think, either love it or hate it. As a child one of my favourite things to eat was beetroot and salad cream sandwiches, the other was runner beans mixed into mashed potatoes. All of which my father grew in the garden, I probably liked it because we ate what we had to hand then or went without.
