My olive tree in the ground has grown approximately 3 foot since the winter. Can anyone give me any tips as to how and when I can prune it?

Blimey Soozie, are you sure that's an olive tree? Mine's not grown three feet in over 10 years!
I prune mine by cutting back the longer shoots to encourage them to bush out. I'm no expert on this though so I'd wait for someone else to comment before doing anything drastic.
